Finely chop a medium onion, scoop out the seeds of a tomato and very finely chop/slice about a quarter of outer part. very finely slice the outside of several slices of cucumber and cut them into pieces no bigger than your chopped onion. finally, add about a teaspoon of freshly chopped coriander.
mix well.

Our local Indian restaurant told us that their secret ingredient - a teaspoon of strawberry jam is stirred into the mixture served with poppadums, It consists of one chopped red onion, two cloves of garlic, one small finely chopped green or red chilli, two dessert spoons mango chutney and three dessert spoons of strawberry jam. And it's delicious !
And try variation:
200g tomatoes, diced
1 medium onion, diced
4 tbsp chopped coriander (or parsley/mint)
1/2 tsp cumin, roasted and ground
1/2 tsp cayenne pepper
2 tbsp lemon juice or vinegar
3/4 tsp salt
Combine everything and serve. Hand choppers which have a 'plunger action' or a mini electric chopper are the easiest way to get and even size piece from all the ingredients. No rules about this though. You can add finely chopped ginger, more mint, omit the cayenne - just combine the lot and eat.
1 Tomato - de seeded and roughly chopped
2" Piece of cucumber - Cut into batons and roughly chopped without the watery seeds
Pinch of salt
Mint Sauce (colmans or similar)
Small bunch of fresh coriander
Add the chopped ingredients to a bowl and a small spinkle of chopped coriander making sure to save some to serve, add the pinch of salt and mix well.
Add the mint sauce a teaspoon at a time until desired flavour.
Roughly chop the last of the coriander leaf and sprinkle over the onion salad before serving.
Perfection.... mmmmm :)
