I do eat healthily most of the time....for my packed lunch i have wholemeal bread with tuna or chicken salad normally, no butter but i do spread mayo on bread instead, can anyone suggest a healthier option to the mayo, something to make the sandwich a bit moist??

Spread a load of beef dripping on your bread (organic of course) it will keep you warm in the coming winter.

i wish! havent had that for years - only prob is the salt i would need to go on it is bad for me!
Maybe you could go for the low fat mayo, or usually i spread a thin layer of mustard on my bread instead of butter. Or how about the really light cream cheese spreads you can buy.. x
What I usually do is mix the tuna with a little salt and pepper and a tablespoon of 'light' salad cream. With the chicken you could try a blob of chilli sauce.
In my chicken and tuna salads, I use low-fat or fat-free vanilla yogurt instead of mayo to hold the salad together. Then season with tarragon and, for a special treat, stir in a tablespoon or two of chopped pecans or almonds.

On the bread, instead of spreading something I put on a layer of thin apple slices - moist, sweet and crunchy! **yum**

Of course, I've then got to use all the salad within a day or two, as yogurt doesn't seem to last as long as mayo. Since I don't mix up very much at once, it's rarely a problem.
