Almond Cupcakes

These are delicious little almond flavoured cupcakes, they are moist and nutty a perfect afternoon snack and an ideal recipe for anyone who likes almonds.
Almond cupcakes are very simple and cheap to make. A great recipe to get children cooking and a perfect lunch box treat for them the next day, if there are any left.
Ingredient
- 150g butter
- 200g icing sugar
- 70g plain flour
- 120g ground almonds
- 5 egg whites
- ½ tsp almond extract
Method
- Preheat the oven to 180C.
- Sift the sugar and flour into a large bowl, mix in the ground almonds then rub in the butter until it becomes like bread crumbs.
- Then beat in the egg whites and add the almond extract.
- Divide the mixture between 10 muffin cases and place in a muffin tin.
- Bake for 20 minutes, until lightly golden. To check if cooked insert a knife into one of the cakes, if it comes out clean it is ready.
