American Sour Cream, Buttermilk Pancakes

For those of you with a sweet tooth what better way to start your day then a massive stack of pancakes dripping in maple syrup. These sour cream and buttermilk pancakes are a perfect breakfast, they are light and fluffy, delicious, with yummy flavours that are slightly different from normal pancakes.

Get up early one Sunday, they are worth it. You will soon wake up everyone in the house with the delicious smell wafting from the kitchen. If morning is too early then they make a great lunch or a wonderful dessert anytime of the day. Children, adults, anyone you live with won’t be able to resist them.

Ingredients

  • 125g self-raising flour
  • 25g sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½  tsp salt
  • 120ml buttermilk
  • 235ml sour cream
  • 1 large eggs
  • 2 tsp vanilla extract
  • Unsalted butter for cooking and serving

Method

  1. Mix the flour, sugar, baking powder, baking soda and salt together in a large bowl.
  2. Whisk buttermilk, sour cream, eggs and vanilla in another bowl. Add to dry ingredients. Stir until batter is just blended.
  3. Melt a little butter in a frying pan, ready for cooking.
  4. When the pan is hot pout some of the batter mix in leaving space between the little pancakes.
  5. Cook until golden on each side.
  6. Continue cooking the rest of the mix.
  7. And serve with butter.
