A bacon, egg and cheese muffin is a great breakfast sandwich and a perfect treat on the weekend. If you have a little extra time on your hands this is a wonderful breakfast recipe that you’re whole family will enjoy, especially children.
If you have a long day ahead of you a filing breakfast is important and will make a huge difference to how you feel. Bacon, egg and cheese muffins are packed full of energy and will keep you and your family full until lunch. They are a perfect start to a day.
Ingredients
- 2 plain English muffins
- 4 rashers of lean bacon
- 2 eggs
- Mozzarella
- 1 tsp vinegar
Method
- Grill the bacon.
- To poach the egg boil a saucepan of water and add a tsp of vinegar. Crack the eggs into the water; it should take about 5 minutes to cook depending on how you like the yolk.
- Slice the muffins in half and lightly toast them on both sides.
- Place some grated mozzarella on one half of each muffin and grill until cheese is melted.
- Place the bacon on the muffins followed by the eggs.
