Mrs Chappie! lardy cake for you

As promised: Grandma`s Lardy cake recipe. (of course she used a pinch of that, pinch of this etc but thru the years we honed it down to specifics.
First, make sure you have Rennies at the ready.
8 oz flour, 1/4 t each mixed spice and salt, small pack dried yeast or 1/4 oz fresh, 1/4 pt just warm milk, 2 oz each sugar, lard, dried sultanas.
Mix flour, spice & salt into bowl, keep warm in oven. Mix well a small drop of milk and yeast and put in warm spot till goes frothy. Add this to the flour mixture with enuf milk to make soft dough. Beat very well, cover, put back in warm spot till about doubled.
Roll out dough to an oblong 1/4" thick. Put half lard, half fruit & half sugar. Fold 3 times, turn half around and roll out again.. Put rest lard, fruit & sugar. Fold 3 times again, turn half around and roll out again to oblong about 1" in thickness. Put in big baking tin and leave in warm spot till well risen.
Make some diagonal cuts on top and glaze with mixture of sugar and water.
425 F for about half an hour.
Then try not to eat it all at once.

Blimey, ya can only have 'em as a treat though. Had heartburn for two days after I'd had the first two (mind you, between hubby & me, we ate two within two days!)
