I have a sweet potato in my fridge. Any ideas for what to do with it? Keep it clean folks!!

Stuffed Peppers with Sweet Potato Mash
1kg (2lb 4oz) sweet potatoes
4 red peppers
3 garlic cloves
4 cherry tomatoes
� red onion
1 x 250g pack Halloumi cheese
Thyme leaves
2 tbsp olive oil
2 spring onions
25g (1oz) butter
Preheat the oven to 200�C/400�F/Gas Mark 6. Cut the potatoes in half lengthways and score the flesh with a sharp knife. Place in a shallow, ovenproof dish and cook for 45-50 mins, until soft.
Meanwhile, halve and deseed the peppers and place in a roasting tin. Thinly slice the garlic cloves and sprinkle into the peppers.
Divide the tomatoes, halved, onion, sliced and Halloumi cheese, chopped, between the peppers and sprinkle with thyme leaves. Drizzle with 2 tbsp olive oil and season.
Pour 4 tbsp water into the bottom of the tin and cook in the oven for 35-40 mins, until the cheese browns.
Remove the potatoes from the oven and spoon out the flesh (discard the skins). Mash with spring onions, chopped, and butter. Serve with the stuffed peppers.
HOT TIP
You can cook this on the barbie - wrap each potato half in foil and barbecue for 25-30 mins, turning occasionally. Wrap the peppers in pairs and cook for 20-25 mins.
Totally unrelated to sweet potato, but woofgang's culinary mantra that anything can be improved with maple syrup and cheese is bang on the money as far as I'm concerned. Has anyone tried grilled Brie or Camembert on toast with maple syrup drizzled over? I first came across it in a tapas place in Madrid and have never looked back...divine!
