I've just found out that people can message you on Facebook even if they are not on your friends list.
Is there a way of stopping this please?

It's actually very useful.
If someone contacts you you don't want to know about you can block them or report them

I agree that friend requests from Joe Bloggs can be a pain: best set to "friends of friends" unless you are one of those people who likes to harvest them. (friend suggestions on the other hand can be fun)

Set your privacy settings to friends only

You don't have to open them and even if you do they won't know unless you answer them.
