Any reason why I can't add a splash or two of whisky to the tea when making this sort of loaf/cake?
You soak the fruit in hot tea overnight before adding to the rest of the ingredients and baking. What do think?
Ah Welsh cake. Happy dreams. I had the family bakestone for many years until recently. At least 100 years old.
I would prefer a glug or two of pussers rum to infuse the fruit personally.
Yep, all bran, sugar and dried fruit soaked in milk (or anything you fancy) for an hour, add flour and bake. The recipe(s) are online, I’m a duffer and can’t do links on my iPad :(
It’s similar Barry, but I use the one Kellogg’s have on their website. And I always add more fruit of whatever sort I have in, usually dried cranberries.
Well there you go then, definitely worth a go :)
I haven’t made it for quite a while but from memory I used to double the quantities and freeze one. Mind you, it’s so quick and easy to throw together and shove one in the oven while you’re cooking something else.
