The first thing to note is that you have 15? swops to complete the puzzle. For each swop that you do not use, you get one star. Therefore to get 5 stars you must complete todays puzzle in ten swaps. If you do it in eleven swops, you will get 4 stars and so on.
The next thing to note is that today there are 15 letters that are not green, Therefore if you are going to get 5 stars, 5 of the swops that you make must swop BOTH tiles to green at the same time. The other swops must also have one tile change to green.
Therefore where you have multiple choice of certain letters, today for instance there were 3xA, you need to try and select the correct one to make both tiles turn green at the same time eg today the bottom row was mange - swop the a 4th letter in the bottom word for the G the second letter in the bottom word, and both will turn green. If you choose one of the other As, only one of the letters swopped will turn green, and it is unlikely that you will then get 5 stars.
Letters don't always match first time and often you have to move one letter to a certain position where it doesn't turn green (but the other letter swopped does) but on the next swop with that letter BOTH turn green.
