if music changes from 4/4 - 5/4 does it speed up or does the tempo stay constant at say 120bpm

Depends - it could do either...
As Mark says, it's going to depend on what the composer intended. There's no direct connection between time signature and tempo.
As above. Time signature has no direct effect on tempo. All it dictates is how many beats to a bar and what type of note to a beat.
I think it would stay the same because 4/4 and 5/4 are just how many beats in a bar there are. the speed can be down to the notes and how gthey are written e.g crotchet, quaver, semibreve, semiquaver.
