What is the best and easiest way to cook fresh salmon - well, at least that which is sold in the chiller cabinets in Sainsburys, for example? Ta Muchly.
I always do it in the microwave.
A good splash of lemon or lime juice, or white wine, and a couple of tablespoons of water, in a covered dish for two minutes for two bits of salmon. Turn, and do for another minute or so. Perfect.
Microwaving is an excellent way to cook salmon steaks (and also other firm-textured fish, such as whole trout).
I've not tried Ethandron's technique though. I simply microwave a salmon steak, as it is, for a couple of minutes (at the most) on 'high'. You can cook a smallish whole trout in the same time too, but remember to score the skin first.
I like them pan seared for crunch. Hot fry pan, add olive oil & place salmon skin side down for 3mins, turn over with spatula & fry till salmon is opaque color & flaky; about 5mins. A bit of burn adds texture. Serve with lemon, boiled new pots & broccoli.
