Ingredients

2kg wild hedgerow fruit. We used brambles, rosehips and plums
2 cooking apples
100ml gin
Water to cover
1kg Jam sugar

Method

1. Cut the apples into quarters and remove any stalks from the fruit - rinse and add to the pan with the fruit. Pour in water until just covered and simmer for 45 mins until soft.
2. Pour the fruit mix through a sieve to remove any seeds and transfer into a pan.
3.We were left with 2 litres of juice and added 1kg of jam sugar. You can adjust the amount of sugar depending on how much juice you are left with.
4. Add the gin and boil the sugar and liquid over a high heat until it reaches setting point (105C)
5. Remove from the heat and leave to cool. Sterilise your jam jars, fill with jam and seal with a waxed disc and seal immediately.

I wish I liked jam but I don't. That does sound lovely.
I did an allotment soup this week.
Onions, tomatoes, courgette, garlic and a huge handful of basil, were rendered and blitzed with a stick blender.
That sounds lovely too. Now, soup, I do like.
My next door neighbour has given me a jar of Hedgerow jam without the gin. I shall have a word with him.
Wolf please excuse me, I don't want to start a new thread but just need to ask this question. I have had beef and red wine cooking for 5 hours in the slow cooker. Is the long enough?

Ladybirder - I thought for one minute you were actually asking me about cooking in a slow cooker. I can heat things up in the oven or microwave and that about the total sum of my cooking skills.

It's the same as a microwave really Wolf. Bung your stuff in, set the timer and press the Go button. Only difference it's in hours instead of minutes;-))
