curry

I made a curry last night and the recipe stated to use 2 spoonfuls of curry powder. The only curry powder I had was medium curry powder so i used that.
However although it was nice the curry was too hot! Next time should i cut down the amount of curry powder used, or use the same amount but a mild powder?

Even better to to buy cumin and corriander seeds, which you burn and then grind into a pulp. Once you have added this spices, use proper chillies (red or green depending on personal taste) and this should give you more control over the spice as well as a better taste.
If you like Indian food, get a decent Indian cook Book, Madhur Jaffery is a good one for a start. Get the spices and start from scratch, If you are not used to spicy food go easy on the chili powder/cayenne pepper. It comes out better than just putting curry powder in even if is a bit of a mess on. Our Friday nights are Curry nights and sometimes I start on Wednesday to get the dish I want.
