I think it is Schubert's 'Ave Maria' (possibly performed by Aaron Neville, once used as the theme tune to the film 'Alive', although I am not too sure if that is the version used)

I think it's by Bellini called Casta Diva but definitely Maria Callas. Sorry to dispute other offers ! !
