Wash your rice, then put it into a saucepan cover with milk then add the same amount of milk again, add grated nutmeg and sultanas if you wish. (this allows you to make as much, or as little as you wish) Bring to the boil stiring to prevent the rice sticking. turn the heat down to simmer and cover, stirring occasionally. After about 20 minutes the milk will have been absorbed, add cream if you wish, allow the cream to warm through and it is ready to serve.
A firm favourite in our house.
Enjoy!

i like my pud sweet and creamy! I put three handfuls pudding rice in pyrex dish and add two tablespoons sugar. Pour in about pint and half milk, mix and grate fresh nutmeg on top (plenty!).
Put in oven on a tray, about 160 for one and a half to two hours, once everything in dish is not liquid at all. . Once out of oven, leave to stand for 15 mins then break skin and pour in half tub double elmlea cream and pull skin back. Let cream seep through and then eat! yum!!
