Why do they take the wet food out of their bowl and plonk it on the carpet?

To be annoying, pure and simple. Well that's why my cats do it.

When the cat lived with my Mum, I thought she did it because her bowl was too deep to get the food out of so I bought her a shallower one. Then I thought maybe it was because the food tends to come out of those pouches in a big lump and she found it hard to break it up so I make sure it was broken up. It made no difference. The cat is with me now and she traverses the tiled kitchen floor and the hallway wooden floor to get to the nearest rug so that she can dump it there. I give up.
It may be the bowl their food is served in isn't wide enough - if the sides touch their whiskers it tickles/irritates them so they scoop out mouthfuls to a more comfy spot to enjoy their meal. Watch next time their eating and every so often they will shake their head which mean their whiskers are being irritated.
