We use them to develop new medicines (controversial, but we do) They graze and keep the landscape the way we want it to look. Observing them teaches us about ourselves.....shall i go on?
Animals form a major part of a balanced ecosystem. remove animals and the ecosystem will be so disrupted that that it will no longer be suitable for us humans to live in. That is why they are so important to us.
As an example, assume we get rid of animals and all humans become vegetarians. Most of the plants we depend upon will disappear, either because the rely on bats, birds, moths, butterflys, bees etc for pollination or because they rely on animals to disperse their seeds.
