Hearing the word Epstein (however it is pronounced) does not emphasise jewishness. If anything it sounds Germanic. The surname derives from a German town.

I have no idea of the significance or hidden meaning (I doubt there is one) but that word if pronounced by a German would be Ep shtine. I though it was the sh sound people were getting uptight about not the tine or teen.
