Why is my iMac the tortoise compared to iPad the Hare?
My iPad fires up from being powered off in 18seconds compared to iMac 2019 running current updated MacOS -takes around five minutes and displays way too many rotating coloured wheels between apps and files. If it weren’t for opening RAW files in Photoshop CC I would ditch the iMac!. The Mac does have have the older SATA drive compared to the iPad flash drive, but the gap between them shouldn’t be so great?

You haven’t said which iMac you have.
The iMac uses Intel chips and the iPad has ARM chips specifically designed and optimised by Apple. Not only are they faster, they consume significantly less energy than the Intel chips.
Your iPad is obviously new, but your iMac could be ancient.
The good news is, Apple are ditching Intel in the next iMacs and will be using ‘Appe Silicon’ (their own Arm chips).

I did say it was a 2019 model- wrong (time flies) 2017 3GHZ Quad Intel core i5 8gb RAM. 1TB internal sata dr. (2.5TB External Drives) Startup time from power on to desktop is actually 3mins. (Feels like 5)
