Increasing Font Size

I only use an iPad for emails, notes etc. I can’t find how to increase the font size. I’ve found what appears to be a tool bar, an icon of a font. I’ve tapped it but the font when printing on the iPads display still doesn’t increase in size. Any info please. Thanks.
