Whenever my springers are concentrating on something in the distance (e.g. bird makes a sound) they lift one paw up. Why do they do this?

It is a way of showing you that they are 'pointing' at the target. You will find that their nose is in the direction of the bird. Springers were bred to 'spring' game to be shot. Depending on wether the dog is trained to the gun or not the accuracy of the 'point' may vary.
A lot of gun dogs do the same, especially 'pointers' hence the name.
