The Butcher Bird.
a european bird that does this is called a shrike.
It could possibly be the Kookooburra I'm not really sure on the spelling but it is similar to the shrike in behaviour
As Jaybee has said, this will be the Butcher Bird. You refer to Australia so it will be the Grey Butcher Bird ... Cracticus Torquatus ... a member of the family Cracticidae. This bird looks very similar to a magpie and does kill its prey by impaling it on thorns or wedging it in the forks of branches.
Probably the Butcher bird, but there's also a South Australian Piping Shrike.
