... but would you say a male or female dog/cat would be easier to train/handle etc....?

All of our dogs have had very different personalities within the weimaraner spectrum and they have all found different things easier or harder to learn, irrespective of whether my husband or I was the trainer. Also once they understood what was wanted, they all displayed the same level of decision making over whether to obey or not!!!! Now if you had said horses, I definitely get on better with geldings or stallions rather than mares.
Cats seem to be quite independant creatures and as such the word 'training' takes on a different meaning than when applied to dogs. As tartanwiz rightly says when animals are neutered they seem to be more biddable than in their previous state.
I have had dogs of assorted breeds and of both genders throughout my life and have kept horses/ ponies for over 40 years and the old adage can be applied to many species....'you can tell a male, but you have to ask a female' :o) Trudi
