i have eventually got my fish, a baby fantail, 2 minnows and 2 danios.

When i bought them from the shop, the assistant found it very difficult to catch the danios when there were about 10 of them in a tank (of the same size), how am i meant to catch the two of them for the water change?

Why do you need to catch them?? When I do a water change I just siphon the water out the tank, obviously you cannot change all the water at the same time anyway so just leave them in. I also have a gravel cleaner on the end of the tube so as it siphons the water out it also cleans the gravel. There is no need to catch them and stress them out.
The only way is patience and practice, Clear the tank as much as possible because they will always find a hiding place from the net. When trying to catch them, move the net fairly slowly, and try to manoeuvre them into a corner. good luck.

Agree with Sazzy, no need to catch them at all. When I water change my tank, they just retreat lower to the tank. You don't take all the water out anyway, so no need to stress them.
