dessert suggestion

can anyone suggest a quite easy straightforward dessert to follow a 'posh' macaroni cheese that I am making for mothers day - feel it should be light without cream/ice cream or the likes. would be good if could prepare in advance at my own house but if not will make at mums so would not really not want to be disappearing into the kitchen for too long. Have been browsing today but nothing catching my eye.

Line some ramikins with clingfilm. Then press in slices of bread to cover the inside of the ramikins. Heat some fruits and berries with some sugar in a pot, bring to the boil then simmer. Put the fruits into the ramikins then cover the base with bread and then clingfilm. Leave to chill.

Peel and de-pith an orange per person, then slice thinly. Lay slices in a dish (glass always looks good). Make a caramel sauce and pour it over the oranges. Leave in the fridge for a few hours to chill. If you can't be arsed to make caramel, peel and slice the oranges, pour over a goodly helping of your liquor of choice (brandy's good, as is Cointreau), chill until required. You can do the same thing (with liquor, not caramel) with a fresh pineapple, but use Kirsch as the liquor for best, yummiest effect.
Pineapples are good at this time of year so why not try something a bit different:
Pineapple Bread and butter pudding:
Ingredients:
6 slices raisin, white, wheat, or oatmeal bread, cut in cubes
15ozs Pineapple flesh, chopped (Reserve Juice
50g golden raisins, chopped
2 eggs, beaten
250g buttermilk (or milk and yoghurt)
100g sugar
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1 teaspoon vanilla essence
1 teaspoon salt
Directions:
Preheat oven to 375 degrees Butter a large casserole dish. Add bread cubes. Chop pineapple, reserving liquid. Add pineapple and raisins to bread mixture. Beat eggs with buttermilk, sugar, spices, vanilla, salt, and reserved pineapple juice. Pour egg mixture evenly over bread. Cover and bake 1/2 hour. Turn down heat to 350 degrees F. and bake 20 minutes longer, uncovered, or until pudding is set and tests done. Serves 4.
