Why is it now impossible to copy and paste a persons user-name?
I found this useful when addressing a person with a long and unusual user-name.
At the moment one has to keep referring to the name, to make sure one spells it right.
Also why can't one spell check the headline panel?

You can, as others have proven. I understand your problem however.
The way I work around it is to move the mouse position to the left slightly more than you might expect before clicking, holding, and dragging across.
As long as the arrow does not become a hand just before you start clicking you should be fine.
Also, your life may be made easier by using ctrl+c to copy and ctrl+v to paste (rather than right-clicking with the mouse).

anotheoldgit, now that user names are links, you have to start and finish highlighting outside the link area (i.e. a bit wider than you normally would) in order to copy. If the cursor is a hand when you click / let go, then you'll go to their user profile. Drag a bit wider so that the hand disappears (but the highlight remains), and you'll be able to copy as before.
