Why Does Sucking Sherbet Make The Roof Of The Mouth Feel Sore?

Never stopped me having too many sherbet pips or sherbet lemons ...but why does sherbert do that? Is it acid?

Having a chemical reaction going on in your mouth is likely to be noticeable! Sherbet contains citric acid crystals and baking soda (sodium hydrogen carbonate). When water is added (via the saliva in your mouth) they react together, in a 2-stage process, to produce water and carbon dioxide.
