where can i buy low carb bread and what makes it low carb?

gone on a low carb diet, not the atkins i hasten to add, just cut out bread potatoes, not rice or pasta so not sure about those. hubby has to have sandwiches for lunch as he is such a fussy eater, wont have salad or couscous etc. i have not seen any low carb bread around for a while, any ideas? also, if i were to make my own, what would i omit to make it low carb??

For more on marking an answer as the "Best Answer", please visit our FAQ.we also have cut down on carbs and like your husband, mine finds sandwiches easier to take to work, so I use Nimble wholemeal, it's very tasty and also makes nice toast. It comes in white, wholemeal and wholegrain. If you have a Greggs bakery near you they do a fabulous low GI loaf, its really yummy.
May I jump in here before you get too into your diet and explain a few things?
You need carbohydrates! They are what gives your body energy. What you need to cut out is "simple carbs" like white bread, white rice, white pasta...processed/bleached things. The majority of your carbohydrate intake should come from complex carbohydrates, vegetables and fruit (more veg than fruit) and a small amount from things such as wholewheat pasta, brown rice and wholewheat bread.
Potatoes are actually pretty good for you but people eat too much of them! Try sweet potatoes instead or just eat less regular potatoes.
Simple carbs like I mentioned above flood your blood with sugar and like a pendulum, then your blood sugar level drops and makes you want more! You need complex carbs as I mentioned above as they help stabilise your blood sugar level and you won't feel as hungry.
Complex carbs are essential for your health, lots of broccolli, kale, asparagus, spinach, peppers and lesser amounts of fruit and lesser amounts of rice and pasta and least of all in your diet, bread.
