I was a veggie as well in my teens.
How about a nice veggie lasagne or other meat free pasta or rice and sauce dishes (although you could add veggie bacon bits) with mushrooms, courgettes, peppers, onion, sweetcorn etc... Veggie risottos too.
Homemade veggie soups like vegetable, leek and potato and watercress.
Roasted peppers stuffed with rice or couscous and mushrooms, courgette and onion.
Veggie stirfry with beansprouts, mange tout, baby sweetcorn etc...
Veggie casserole or stew or stroganoff.
Omelettes with veggie cheese, mushroom etc...
