What can i do with it??

I had bought 2 pieces of cheese ready for xmas (bbf 15.01.09)and my wonderful son decided to open both of them last night will i was out! i am soooo cross with him. best thing about it is none of us like to eat cheese enough to eat them up while at their best so only buy such things for special occasions when we will have visitors to help eat them. one was wensleydale with cranberries and the other cheddar with chives and onion. the wensleydale one he has taken the tiniest little bit of the corner i dont know why he bothered! Can anyone give me recipes to use these up - or an after thought would they be ok to be frozen?? Kids!!!

I just looked on British cheese.com and they give this advice
British cheese is best enjoyed fresh, although cheese can be stored in a cool environment for anything from a couple of days to several months and depending on the type of cheese, will not affect the taste.
Christmas is only just over a month away, so stored in the fridge may be ok.
(It says about freezing that it makes the cheese become crumbly but doesnt affect the taste)
