Cake without Butter
I have a friend coming over for afternoon tea and want to make her a cake, but she cannot eat butter. Is there any suggestions of a cake without butter or margarine? Thank you xx

2 eggs - switch in a bowl
add :- 2 heaped tablespns S R flour
" :- 2 level " Drinking Chocolate *opt*
" :- 2 level " sugar
1 heaped teaspn Baking Powder
2 tablespns Veg Oil
2 " Cold Water
Mix altogether
Line bowl with clingfilm
Add mixture and cook in microwave 850 Watts for 3 mins
Voila A lovely cake in no time

It's too late for today but I make two slightly different fruit loaves with no fat.
1. Fat Free Fruit Loaf
8 oz. mixed dried fruit (any combination of raisins and sultanas)
4 oz. soft light brown sugar
5 fl. oz. hot tea.
8 oz. Self raising flour
cinnamon (optional)- about 1 teaspoon
1 egg, beaten
1 rounded tablespoon marmalade
chopped walnuts for topping (optional)
Put fruit and sugar in large bowl and pour over hot tea.
Leave overnight or for several hours.
Preheat oven to Gas 3.
Stir in egg, marmalade, flour cinnamon to fruit mixture
Mix well.
Put into greased and lined loaf tin (about 2lbs)
put chopped walnuts on top (if used)
Bake in centre of oven for 1� hours,
cool on wire rack

This is really moist and quite delicious.
4 Weetabix crushed into a large bowl
3 oz. Raisins
3 oz . Sultanas
2 oz.chopped cherries or dried apricots - whatever you like
5 oz. soft brown sugar
� pint milk
Mix above in large bowl and then stand for 1 hour.
Add: 8 oz Self Raising Flour
1 teaspoon cinnamon
