how d'ya get that spanish flavour?

i had some tapas - for the first time - today.
I ordered chicken enchilladas and vodka salmon & orange kebabs.

i was amazed at the flavour and how delicious they were. It was so refreshing to have new flavours dancing on my tongue!

I presume the salmon was marinated in the vodka, but have no idea how they had made the enchillada.
It had peppers, onions, chicken and a lovely tomato-ey coating.
Any ideas? Paprika?

yes, i have some sweet smoked paprika and use it quite a lot. but this had something else i think. I wondered if there is a different paprika.
There's the picante (spicy).

They use a lot of saffron, but mainly in paellas and zarzuelas.

Could it have been eneldo (dill) on the salmon?

I think it's made from stewed zuzuzuelas
