sugar in veg in jars - how much is in the food?

im talking about jars of pickles, gherkins, cabbage etc...
in the ingredients it usually lists sugar is added to the water/vinegar... but how much of this is actually in the vegetables?
is it just so the waters not too bitter or does it soak in a lot?
