Are you seeking a list of non-boring jobs purely as an academic exercise or because you're looking for such a job for yourself. If it's the former we could include jobs such as President of the United States or Commissioner of the Metroploitan Police. However they won't help much if you're seeking immediate employment!
So (assuming that you are looking for ideas as to what type of employment you could go into), we'd need to know about what qualifications you've got (or are expecting to get), how old you are, whether you're able (or willing) to undertake years of study to get to whee you want to be, etc.
However, as a starting point, I found that teaching in a secondary school offered new challenges every day, as did running a railway station.

when I left school which is a long time ago the careers officer had exactly the same challenge for me - he came up with Customs and excise and quantity surveying plus another I cant remember. Today, I am a software developer & own the company and it suits me perfectly because I can talk to many different people and understand their problems and recommend solutions - I do the 'systems analyst' bit and employ people to do the coding etc.
