Today I saw an amazing looking girl at the supermarket.. I wanted to tell her how much I fancied her. (maybe poof of love at first sight) but alas I didnt have the nerve or courage to approach her

But anyway, telling a beautiful girl that she was would make her day and yours, even if you never saw each other again. (but if you kept meeting in the supermarket at the same time it'd be safe to assume she liked you back!)
Perhaps don't go over the top by saying she is 'amazing', but I have often walked up to women and said 'gosh you have really lovely eyes' or something similar, when the person merits the compliment (i.e. I really do think she has lovely eyes).
But I am married so I would have no further intention's, just maybe she walks away and feels good or thinks I am a weirdo. Either way, no real harm done!
The thing to remember is that often these chances don't come along often so if you don't get brave you may just miss out on a smile or a friendship, maybe more.

I had that with a checkout girl at sainsburys...we made eye contact a few times and used her till a couple of times (no more than that otherwise it does get weird). Broke the ice with normal chat. 3rd time waiting until noone around and just asked her out. She already had a boyfriend so left it at that. At least you can get it out of the way and move on.
Attraction is a really unique thing, and I think it's good to act on it - exactly, dont' be like a stalker or anything, but just making a 'first move' on a girl can be nice, open, chilled - an who knows where it might lead? You have to give yourself the chance to find out. No one was ever offended by a genuine compliment, either!
It's a tricky one. An attractive woman probably has her fair share of approaches, and it;s difficutl to separate the genuine from the leery ones. The idea of flowers with your number is nice, but sadly, she is unlikely to respond - you may have noticed her, but, however genuine and nice you are, unless you stand out physically in a Depp / Clooney/ Beckham type way, she may not have noticed you back.
However, she may just be intrgiued enough to follow up your gesture, and you;ve nothing to loose, so I'd go for it.
