The white of my eyes used to be really bright white but recently I've noticed they're not quite as bright as they used to be.Is there any reason for this, ie my diet or because of alcohol?I do enjoy a few drink after work a good bit, I must admit, but I drink a lot of water too and eat reasonably healthily too.
Also, is there any way of making them brighter again?Like headlamps on a car!!

Many things can cause discolouration of the sclera including Osteogenesis imperfecta. If you are seriously worried, visit your GP.
I there`s a slight yellowing in the corners you could be anaemic
Excessive alcohol can alter the brightness of you eyes sometimes to extremes in cases of cirrhosis. Stay off the booze for a few days and I am sure you will notice them brighten. A quick fix method are eye drops 'Eye Dew' I think it is called but I would not recommend this other than for very occasional use. I have also noticed that as you get older the whiteness of your eyes does change, I am not suggesting that you have aged overnight but maybe you have only recently noticed a change which may have been ongoing for a while.

If you dont drink for a while and they dont brighten then you may wish to consult your doctor.
Should have mentioned that the eye drops only reduce the redness in the eyes which is caused by dilated capillaries giving eyes that pinkish look. The drops contract the capillaries therefore reducing the colouration.
