what would happen to a child if something happened to their parents?

i'm just wondering - by law without a will or any other legaly binding document what would happen to my son should something happen to me and/or my boyfriend.
i live with my nan as does my son.
i do have a boyfriend. he doesn't live with us though. we arn't married of course, don't share any houses/bills/finances anything like that at all. my son does have my b/friends surname and my b/friend is down as the father on my sons birth certificate.
just wondering if anybody could tell me what would happen to my son?

This cos they were frightened that my uncles family might get custody. My parents signed it and it is leagally binding.
