I'm loosing weight, think its due to a number of things, stress, changes and a busy life style. I live alone and work days, when I come home I cant b bothered cooking a healthy meal. Any ideas of some hearty meals for a single girl who wants to strengthen up a bit? x

If you're out all day, just bung some fresh meat and veggies in the cooker and leave it on all day...when you come home, 'voila!'
It's dead easy, and ideal if you're not really in to cooking.
You can pick one up for 30-40 quid easily. Just stick some shin beef, carrots, onions, potato, maybe some herbs, and a load of red wine or stock into the cooker and leave it all day. It keeps all the nutrients in the liquor too, so it's good and nutritious!

Pinkie - one way I deal with the problem of those days when I barely have enough time and energy left to eat - much less cook is that on those days/weekends when I do cook healthy meals - I make extra of everything - take a plastic container and put a portion of each food I have cooked in it to make a complete dinner and pop it in the freezer. Then all you have to do is pop them in the microwave to have homemade healthy food.

This is quick and easy way of making macaroni cheese if you have a small non-stick saucepan as it's a one-pan meal.
Simply boil the required amount of macaroni in the saucepan. If you want some extra colour/texture, throw in a handful of frozen peas/sweetcorn or some finely chopped celery. When the pasta is cooked, drain , return to saucepan and stir in a generous portion of grated mature cheddar cheese until it is melted.
Just make sure to soak the pan in hot water immediately after you've dished up and cleaning it won't be a problem.
