There is a school of thought that metabolism doesn't slow down at all, but that you just burn off calories at a standard rate and that everyone is the same.
You have basically reduced your overall weekly calorie intake and have lost weight as a result. You are burning more calories than you are eating. All diets result in immediate weight loss because the person has reduced their food intake. Whether you can continue for EVER is another matter. It sounds to me that you are going to be starving for 3 days a week, which could affect your functionality, relationships etc. And then the rest of the week you eat more. why not just eat 1250 a day? OR look at it as a weekly consumption- and make sure you have 1250 x 7 a week. If the average- 1250 (approx) is less than you were eating before, you will lose weight.
It really is just a case of equations! Or why not do alternate days? That way you could ensure that your metabolism- if it slows down- definitely won't.
