Can someone please explain the difference between fat and cholesterol. I'm totally baffled by some foods such as peanuts that are high in fat but have zero cholesterol.

Have a look at this page on the website of the Thomas Jefferson University Hospital - it is one of many sites that gives you the information you should need. http://www.jeffersonhospital.org/cardiology/show.asp?durki=7 803 You will see that cholesterol is not present in 'plant' foods but only in 'animal' foods - the ones that also tend to be high in saturated fats as well.A high fat diet tends to stimulate the production of cholesterol which can in turn lead to clogged arteries. Yuk!! .
Saturated fat produces bad cholesterol but everybody also produces their own good cholesterol in their own bodies. Holds the brain and tissues together.
