I am an aetheist and my wife is Catholic. Because my wife's first marraige was annulled, she was able to be married again in a Catholic church.
If your partner is not a seriously anti-religious person, I am sure he can 'go along' with the necessities of getting a Mass in church to follow your beliefs.
I had to prove I was baptised by producing my baptism certificate - this will be an obstacle if your parnter does not have one. Then I had to attend a few informal 'chats' with our then parish priest, when i agreed that any children would be raised as Catholic - no problem for me, my wife's two children were already baptised and in Catholic school, and our third followed in their footsteps.
We had a full Nuptial Mass and it was fabulous. For me, we could have got married in the local cricket pavillion, but it meant a lot to my wife, so no problem for me.
Trivia Fact - our priest was John Tolkien, son of JRR Tolkien who wrote 'Lord Of The Rings'.
Good luck.
