The lamb is lovely, a little older than usual, 1 year old called hogget, so chops are bigger, i trim them of extra fat and then cook them to your liking...
I've left the shell on the tail bit so you can dip without getting sticky fingers. The crab cakes have turned out lovely, just the right amount of kick to give your tongue the tinglies, without masking the sweetness of the crab!!
