I found it!!! Recipe for Courgette Bread! For anybody who has a glut of courgettes(zucchini)

Try this - it freezes well too
grease two small loaf tins and set oven to pre-heat at 350f/180c gas 4
Grate 400g of courgettes and put them into a seive/collander to drain well.
3 eggs
200ml vegetable oil
400g sugar
1 teasp vanilla extract (use a good one, not essence if you can help it)
600g flour
quarter teasp baking powder
1 teasp baking soda
half teasp salt
three quarters teasp nutmeg, freshly grated if poss
1 tablespoon ground cinnamon
100g of raisins, or sultanas (optional)
Method:
Mix together eggs, oil, sugar courgettes and vanilla, put to one side
in another bowl mix the dry ingredients together, then add to the first mixture.
Pour into the prepared tins bake for 45-50 mins until it springs back in the middle when pressed and has shrunk away form the sides of the tin very slightly
Turn out and cool
You could use a handful of chopped walnuts instead/with the fruit (make up to 100g) if liked - yummy!!!
