Has Anybody got any Recipes for really Healthy Cakes!

Not many Abers seem impressed by this cake but I and all our staff who are on SW love it. Just make sure you add 9 tbsp of sunflower oil and NOT 0 as Ive put in the recipie

Ok... from the depth of my memory
200g ground almonds
56g soya flour
two eggs beaten
skimmmed milk
1/2 cup of splenda sweetener
two apples peeled cored and chopped
blue berries or raspberries approx 1/2 cup
two tsp baking powder
1/4 cup of vegetable oil
mix together almonds, baking powder, splenda,
add eggs and beat until smooth(add a little skimmed milk if too thick) beat in the oil
add chopped fruit and berries
put in lined cake tin and bake (medium oven) for approx 40 mins until skewer comes out clean
If you do it without the oil it is much dryer and doesn't keep as well but is nice spread with low fat philly
you can replace the apple with pear or an equivalent quantity of ripe mashed banana or use chopped strawberries instead of the other berries its pretty flexible
