What are your Credit Crunch recipes....

In these tough financial times when we are all feeling the crunch... what recipes do you have to share with us all that are cheap, easy and tasty???
Simple... but I make baked potatoes (oven cooked not microwaved so the skin goes crispy) with baked beans and tuna/mayo.
OR
Leek and Potato soup, peel and chop potatoes and chop leeks. Add knob of butter and soften in pan for 8 mins. Then add veg stock and simmer for 25 mins until all veg cooked through. I wizz with a blender but like to leave some nice chunky bits of potato. Serve with bread and butter.

Some minced beef, black pepper, onions (finely chopped). Garlic, mushrooms chopped. Mixed peppers. Beef stock cube crumbled in. Home made bread crumbs from a stale slice. Tomato puree. One egg. Mix it all up and push into a loaf tin. Bake for about 45 mins.
If you have one or two strips of bacon put them in the tin first so they are on top when you turn the meatloaf out.
Serve with boiled poattoes & veg with a bit of gravy. lovely.

if you are as old as me (over 21 by about 30 years) just go back to what your mum used to do.
try proper potato hash (not the corned beef rubbish)
fry some mince for a short while, add cubed potato, carrot, sliced leek, some kind of beef stock like an oxo a couple of litres of water and let it simmer away for an hour or so.
good to eat, filling with some crusty bread and dont cost the earth
