It sounds like a case study is needed here. You can only know the answer to this by asking the organisation.
Contact them and ask them if you can ask them some questions for your course. Ask them how they train staff to recognise differences of faith, race, gender, sexual orientation and so on. Ask too about their recruitment procedures.
Be careful not to probe too deeply and be prepared to find them doing very little! If thats the case thank them and go ask one of the high street names who'll have policies coming out of their ears.
