When we did ours, we made notes about what we wanted (and it was very simple, one benefactor and one alternate incase the benefactor pre deceased us) went to see him and told him what we wanted, he made useful suggestions about how to achieve it then we went back a week later to check it and sign it.
If it really is simple Will get a pro-forma Will from W.H. Smith or similar and write one out yourself. There's plenty of advice available on the internet:-

The purpose of the witnesses signature is to verify that they know it is you and they verify that they saw you sign it. No they don't read the will. They are not checking it. Really recommend you read the book published by the Which? magazine if you are intending to go DIY. It explains the core principles as well as the process.
