If I wanted to buy a car which was quite far away, so I wanted to drive it home the same day, how would I go about insuring it without having to drive all the way home and all the way back again?

If you already happen to have all the car details to hand, go to an insurance broker, say, the day before, give them the details and they can get a cover note ready on the spot. Easier than faffing around on the phone - it takes ages.

All you'd then have to do the following day would be go get the car with your cover note.
