If I were to be paid a flat sum for a criminal job that required the work of two people, what kind of percentage of the deal would I offer to the person I pursuaded help me?

An equal share of the prison sentence

Supply and demand.  If you found someone willing to commit crime for the pleasure it gave them, you might not have to pay them.  Equally, you accepted a low fee and it was high risk, you might have to pay over the majority of the payment.

However, I do like Didwot's answer more!

Thanks, guys. I thought there may have been a standard percentage amongst thieves (so to speak) but I think you're right and it's as I expected. 
All sounds a bit sinister to me!
It's a buyer's market, so as little as possible mate! - hypothetically speaking ofcourse!
